Healthy Omelette with Organic Vegetables

Ingredients
 2 Large organic farm eggs
 ½ Organic zucchini
 ½ Organic eggplant
 1 Large organic tomato
 ½ Organic onion
 1 Piece of county
 ½ Crushed garlic clove
 1 tbsp Olive oil
 Fresh chopped parsley
 Salt, pepper
How To Prepare

To make this organic recipe, start by pruning the tomato by plunging it into boiling water for a few minutes. Cut it into cubes. Peel and slice the onion. Peel and crush the half clove of garlic. Wash the zucchini and eggplant. Then cut them also into cubes.

In a frying pan, fry the onion in olive oil and then add all the vegetables previously prepared to make an omelet. Season with salt and pepper. Fry for about 30 minutes. At the end of cooking add the garlic and parsley. Then beat your organic eggs into an omelet and pour them into a hot frying pan with a drizzle of olive oil.

Turn the omelet over at the end of cooking and cook it for another 1 min. Place the cooked vegetables inside. Then sprinkle with the grated Comté cheese and fold the omelet over the top. This way you have an omelet recipe full of good organic products.
