Preheat the oven to 180°C (th.6).
Unroll the puff pastry and cut out long strips about 1 cm wide. Roll each sausage into strips of dough, including the ends, leaving an open space at the top of each.
Arrange them on a baking sheet covered with baking paper on a baking tray in the oven, dilute the egg yolk with a little water and brush the puff pastry with a brush.
Bake for 10 to 15 minutes, depending on your oven. Once cooled, draw eyes with the mustard on the part of the sausage left exposed. Enjoy it hot!
