 2 Cloves of garlic
 2 Onions
 700 g Red peppers
 1 kg Tomatoes
 Bouquet garni
 6 tbsp Olive oil

The traditional Basque chicken recipe starts by cutting your chicken into pieces. If you are not comfortable with this technique, you can also choose to buy pre-cut chicken thighs and whites directly. Then cut the peppers in half, remove the seeds by running them underwater, and cut them into strips. In a separate bowl, crush the garlic and onion.

Peel the tomatoes cut them, and remove the internal hard parts. Prepare a casserole dish that you will heat with 4 tablespoons of olive oil. Pour in the garlic, onion, and peppers and fry them over low heat for about 5 minutes, making sure to stir continuously with a wooden spoon. Then add the tomatoes and cook, covered, for 20 minutes over low heat so that the mixture simmers quietly and releases all the flavors typical of Basque chicken.

Meanwhile, salt and pepper the chicken thighs and whites and brown on all sides in a frying pan with 2 tablespoons of olive oil. When the tomato and pepper mixture is ready, add the chicken pieces and the bouquet garni to the preparation.

Season with salt and pepper to taste and cook for 35 minutes so that the chicken takes on the color and flavor of the herbs. Finally, enjoy your hot Basque chicken, which you can accompany with basmati rice or a blend of wild rice.
