Preheat the oven th.6/180°. Wash, wipe, and cut the pumpkin into quarters. Oil the pumpkin quarters and place them on a baking tray. Surround them with the garlic cloves in their jackets (whole and in their skin). Sprinkle with maple syrup and cumin. Season with salt and pepper. Put them in the oven for about 30 minutes.
3 minutes before the end of the cooking time, roast the pumpkin seeds in a dry frying pan. Wash, dry, and chop the flat parsley coarsely. With a peeler, chop parmesan shavings.
Serve the pumpkin quarters sprinkled with pumpkin seeds, chopped parsley, parmesan shavings and accompanied by candied garlic.
