Grilled Chicken Salad with Papaya and Cucumber

Ingredients
 1 kg Chicken needles
 1 Cucumber
 2 Papayas (very ripe)
 2 Avocado
 3 Limes
 The juice of a fresh lemon
 12 Sprigs of fresh coriander
 8 tbsp Olive oil
 1 tbsp Mustard
 Salt, pepper

How To Make

Squeeze the limes.

Place the chicken needles in a shallow dish and drizzle with the juice of the limes and half of the olive oil. Leave to marinate for 30 minutes.

Peel and shell the papayas. Cut the flesh into cubes.

Wash the cucumber and cut it into large cubes.

Peel the avocados, remove the pits, and cut the flesh into cubes.

Wash and dry the coriander.

In a salad bowl, mix the remaining olive oil, lemon juice, mustard, salt, and pepper. Add the papaya, avocado, cucumber, and coriander. Mix gently and store in a cool place.

Drain and wipe the chicken needles. Grill them for 7 min under the broiler or under a cast iron grill.

Divide the salad among the serving plates and place the hot chicken needles on top. Serve immediately.
