Trim the vegetables as a peasant. Sweat all the vegetables in butter. Add the pumpkin pulp. Moisten with 1.5l of water. Add the crushed garlic and the bouquet garni.
Cook for about 1 hour. Pass to the vegetable mill and then to the mixer. Add the cream.
Dress your pumpkin soup in the hollowed-out pumpkin.
